Mango Cake!!




Ingredients

Crust: 
1 C each almonds and raisins

Cheesecake layer:

2 cups Cashews, ground finely*

1/4 cup raw honey

1/4 cup agave

Juice of 1 medium lemon

1/2 tsp pure vanilla extract

Mango layer :

4 cups fresh or frozen mango, diced

2 dried pineapple rings, soaked 2-4 hours

1 small, really ripe banana

1 tbs Coconut Oil (optional)


Methods/steps
Crust:

blend both ingredients until left with bits

Cheesecake layer:

In high speed blender, mix all ingredients until smooth.

spoon the mixture onto the nut crust.

Mango Layer:

Puree all ingredients until smooth in a food processor or blender. Pour over the cheesecake layer.

Carrot Ginger Soup!



Ingredients:
Juice from 10 carrots and 1 green apple
1 avocado
Juice from 1/2 a lemon
1/2 tsp. sea salt
1/2 tsp. chopped ginger
1/4 tsp. allspice
Methods/steps
Put everything in a high speed blender and blend till thick and smooth. Serve slightly warm.

Zucchini Linguine with Basil Pesto


  • For the Basil Pesto:
  • 2 Cups Tightly Packed Basil
  • 1/2 Cup Pine Nuts
  • 1/4 Cup pumpkin seeds
  • 1 Tbsp Lemon Juice
  • 1 Clove Garlic
  • 1/2 Tsp Himalayan or celtic sea salt
  • 1/4 Cup Cold Pressed olive oil
  • Spring or Filtered Water
  • For the Zucchini Linguini:
  • 3 Large Zucchini
  • 2 Medium Tomatoes
  • 8-10 Dried Olives
  • 1/2 Red Capsicum
  • 2 Tbsp Pine Nuts
  • 1/2 Cup Basil Pesto

Methods/steps

  1. For the Pesto:
  2. Soak the pinenuts and pumpkin seeds for at least 4 hours. Drain and rinse.
  3. Place all ingredients apart from the water into a food processor and process until almost smooth. You still want a little texture to it. Add a little water at a time if it seems too dry.
  4. Store in a glass jar in the fridge for up to a week.
  5. For the Zucchini Linguini:
  6. Use a julienne peeler to slice the zucchini lengthways into long noodles and place in a large bowl. You could also use a spiralizer.
  7. Chop the tomatoes and capsicum, destone and chop the olives and add these with the pine nuts to the zucchini.
  8. Add the pesto and mix thoroughly to combine.
  9. Leave to sit for 1hour before serving if you would like the noodles to soften a bit.

All things have a frequency because all things vibrate.
Let me explain: our world is made of atoms, which make elements (carbon, hydrogen, gold, lead etc) which make molecules (H2O) which in turn make us and the world we live in. All atoms literally vibrate with energy and offer a  frequency. Because this world is made of atoms, this means we all vibrate as well.

Due to the fact that we are vibrational beings, we each offer a unique frequency to the world. This can either be a high frequency, which would result in a higher energy, or a low frequency. The ideas we entertain, the people we associate with, the objects we surround ourselves with, and the foods we eat all vibrate and affect our vibration as well. This is why when we listen to uplifting music it lightens our mood because if the music has a higher frequency than us, it lifts  us until we are literally vibrating at the same higher level of energy. This also explains why when you talk to someone who is feeling blue it is easy to feel sad/lower your vibration too because their frequency/energy levels "rub off" on you.

When someone radiates with a contagious, happy attitude, others notice that when they walk away from being with that person, some of that contagious energy has "rubbed off" onto them, causing them to feel better. This "rubbing off" of energy is called entrainment, which means to adjust or synchronize to someone or something's vibration. Entrainment an is a vital concept evident in and applicable to our everyday  lives. For instance, when you eat food, you entrain to the vibration that it resonates. If we are eating healthy, vibrant, nutrient rich foods that offer a high frequency, our bodies entrain, on cellular, molecular and atomic levels to that frequency. If we eat foods that boost our energy it is impossible to get sick, because we simply are, in the most literal form possible, energetically resonating at a level above sickness and disease, thus making it impossible to get sick.

Due to the fact that we all vibrate, we are affected by electromagnetic waves.These electromagnetic waves all correspond to a different level of energy and have the ability to lower or heighten our vibration. Their order of energy levels (from lowest to highest frequency) is as follows: radio waves, microwaves, infra-red, visible light, ultra-violet, X-rays, gamma rays.

On a day to day basis, we are surrounded by these waves. There are constantly surrounding such as in our cars when we listen to the radio, or at home when we cook with a microwave, watch the TV, or spend time on our computers. TVs and computers emit X-rays which, when used in any amount are capable of removing the electrons from atoms and damaging or detrimentally altering living cells and the DNA contained within these cells. This process of removing electrons from our cells resulting in producing a cation, or a positively charged ion. Ionizing, or in other words, simply displacing a single electron may sound harmless enough, however it generates enough energy to rearrange or even destroy the biological structuring in molecules. This is the process that happens to your food when people microwave, use cold pasturization or irritation on their food. I personally find it rather scary that all three of these undergo the same life-decimating process.

The number one way to elliminate these ions and free radicals from our systems is to oxygenate your body! This can be done in a number of ways,  including, deep breathing, exercising, drinking wheatgrass, eating leafy greens, thinking alkalizing/happy, non-stressful thoughts and knowing that all things are in perfect order, no matter how crazy life seems to get.

Genetically Modified Food: Godsend- or Frankenfood?


Have you ever noticed while in the supermarket how perfectly colored, ideally shaped, or surprisingly large the fruits and veggies are that you are buying? You have possibly noticed this in many other foods too, for instance, how is it that each fish you see in the deli is has almost the same color scheme, size and, somehow, the same abnormal freckle-shape in the exact same spot? What ever happened to plain old fashioned food? Isnt food supposed to be to be grown, not crafted to someone's idea of the ideal? Where is all the genetic diversity? How is this a good thing? Who does it benefit?  Are we really helping things, or are we just making things worse for us in the long run? 
The biggest reason as to why the government instigated the use of genetically modified foods is because, according to them, we would otherwise run out of food and not be able to support the number of people in our world. Thus America, operating under this belief, began to genetically modify foods in the 60's. Since then, most of the corn, soybeans, cotton, sugar, sugar beets and canola in the U.S. has been genetically modified. Unknown to most, this also means that common ingredients derived from this foods, such as corn syrup, soy lecithin, sugar, and vegetable and cottonseed oils are very genetically modified as well. In my college biology class we learned high-fructose corn syrup, a main sweetener in almost everything, is an artificial sweetener made by chemically treating sugars extracted from corn. The process of making it goes as follows: 1) the starch from genetically modified corn is extracted and is processed to make 2) glucose which is then synthetically converted to 3) fructose which is then sold and further processed into common products such as soda, Yoplait yogurt, 100 calorie packs, Powerade, Ketchup, Capri Sun's, Nutri-Grain products, peanut butter etc. In fact, according to California's Department of Food and Agriculture, 70% of all processed foods in American supermarkets now contain GMOs, though no one is required to label them.

 It is interesting to note that almost every generically packaged food available on the market, especially in the U.S., contains genetically modified ingredients unless it specifically says on the packaging that it does not. It is also interesting to note that while almost every country on the North and South American continents permit and promote genetically modified foods, many European countries refuse to do so. In fact, the European Union has suspended the introduction of new genetically modified (GM) crops and has considered banning the import of all GM products altogether. In the U.S. and multiple other countries, the GM foods movement has crept forward quietly enough that the general populous does not know/is not educated enough to care about the effect it has on many local and global aspects of our world. 
A controversy exists about the labeling of genetically modified foods, due to the fact that nearly every box of cereal, every pre-packaged food, every restaurant (whether fast food or otherwise), and nearly every food produced in the U.S. contains genetically modified organisms. Even the cotton in most of our shirts is genetically modified! However, many people ignorantly believe genetically modified foods do not harm or impact humans and/or the environment enough to label foods that contain genetically modified ingredients. Fortunately people are awakening to the prominence of GMOs (genetically modified organisms) in nearly every food, and are seeing and feeling the impact of them in the world and in their own bodies. 
As more people begin to separate themselves from mainstream foods, or the Standard American Diet (SAD), people are beginning to realize that our bodies don't need to ever get sick, that it is actually quite a natural thing to have a clear head, abundant energy, a healthy heart rate, clear skin, a full head of vibrantly colored hair (at any age) and the ability to thrive with health, energy and happiness in any stage of life. We don't need to genetically modify our foods for optimum nutrition because Mother Earth is smart enough to do that, naturally, by herself. We can all take charge of our own personal health in our lives, instead of relying on doctors and science to have all the solutions and quick fixes, allowing someone else to delegate what we put into our bodies, and blindly believing someone else's research, advertisements, and claims as to which things will bring us their idea of prosperity and health. 
It is time to take initiative and become personally sovereign for our own choices and our own bodies. It is very feasible for us to figure things out for ourselves, listen to our own bodies and intuitions in order to feel what our bodies really need for optimum personal and global nutrition rather than being content to depend upon information relayed to us by others.

How to make raw almond milk!

Did you know??
The primary form of lactose maldigestion is estimated to occur in about 75% of the word's population? Crazy, right? Actually, many people are finding these days that they are acutely allergic to certain foods, most especially the ones that are typically extremely processed or are genetically modified (particularly corn, rice, milk, milk products, wheat/gluten, soy, peanuts etc). This is because it has only been since about the 60's (the "green" revolution) that we began genetically modifying our foods. Because our bodies have only had about 52 years since this shift in the way we grow and consume food, our bodies have not had enough time to adapt and many people are finding their bodies cannot tolerate these foods whose DNA as been altered. 

If you experience headaches, excessive mucus, ear infections, gas, bloating, intestinal discomfort or "goopey" eyes in the morning after consuming dairy you most likely have an intolerance to lactose. The scary thing is that many people, particularly in the U.S., do not know they have a lactose intolerance until they either 1) ask doctor about it 2)  are lactose free for a few days/ weeks and then try milk products again to test for allergic reactions. This is because most people have never gone without dairy products in their everyday diet, so they do not know the difference in how their bodies preform until they go off of it for a while. Even if you have been tested are definitely NOT lactose intolerant, it is good to go on a cleanse for a week or so every time the seasons change to flush the buildup of toxins and mucous out of your body. Citrus fruits and dark, leafy greens are some of the cheapest, easiest, most natural foods that will gently cleanse and heal the body from the mucoid plaque that comes from overloading the body with heavy, cooked, highly processed foods such as dairy products.
The very first thing I started changing in my diet when I went vegan was what I was putting on my cereal in the morning. No leche!  
Generic milk can easily be substituted  with rice, almond, or soy (which I actually DONT recommend, because soy also creates a lot of mucus in the body). These alternative milk products can be found at Good Earth, Smith's (in the Health Food Isle/section of the store), or at Costco in bulk. You can also make your own nut milk for a fraction of the price. I'll post the recipe below :)



  • 1 C of soaked nuts (any kind)
  • 3 C of water or 2 1/2 if you want it to be more like "whole" milk
  • blend!
  • pour through a cheesecloth to get rid of pulp
  • taste, and add (optional) cinnamon, agave, honey, stevia, maple syrup, nutmeg, vanilla extract or almond extract to perfection!*
*NOTE: it is best to store almond milk (and all raw foods) in a glass container, because glass is more pure, doesn't leach chemicals into your food when heated up, and preserves the food for longer periods of time -- all of which a typical plastic household container does not do. :) 
ALSO, the reason as to why both recipes recommend soaking your nuts before you make them into a nut milk is because soaking initiates the growing process, causing the dormant life contained inside each uncooked nut you are using to begin to sprout and thereby increasing your nut milk's nutritional value exponentially.

    EATING RAW IN COLLEGE---It doesnt have to be bland!




    10 REASONS TO EAT RAW

    1. Living foods. If you plant a piece of bread in the ground and water it for 3 days, what do  you get? Mold. If you plant an uncooked tomato, radish, or sunflower seed and water it for 3 days, what do you get? LIFE. What once was dormant will spout into a tiny, leafy, living organism. Can bread ever awaken into something living? Which fuel do you think will sustain you longer? Which do you think provides more energy? In the wise words of Sid the Sloth--"I choose LIFE." 
    2. Enzymes. Cooking food denatures proteins, breaks down DNA and eliminates most of the vitamins and enzymes in food. Though the minerals (mostly) remain, the living part of the original food is destroyed. Your body needs enzymes to digest and extract vitamins from your food. When we eat raw, living foods that still contain their enzymes, our bodies can extract the nutrients it needs without stopping its other essential duties. Eating raw enables the body to give enough attention to other essential bodily funtions--like healing, cleaning, and detoxifying. Which is why when we eat more purely, we reap...
    3. Insane energy! Spinach--the ultimate 5-Hour energy boost! Seriously, if have you ever eaten even ONE completely raw meal you will notice the amazing halo of energy you will gain! I dare you to try it. Johnathan Mead said "I used to get tired around 2 or 3pm during the day. Now I simply don’t have that problem. When I do get tired, it doesn’t last nearly as long [because] an orange or apple will recharge me within a few minutes." If you are cramming for a test (which I don't advise), or are pulling an all-nighter (also not advised) go eat a salad, or through some greens into an all-fruit smoothie and experience the most fruitful cram-session of your life. And--get this--you will actually retain it. Crazy, right?
    4. Sleep less while reaping MORE energy. After the days when I eat raw, the next morning I awaken filled with energy, motivation, and clear head. This can be a very nice perk for us college kids, seeing as we don't get much sleep even on the nights when we don't have pounds of homework.
    5. Acute mental clarity and higher motivation. Eating raw has been the #1 thing that has helped me improve my math grade. No joke. I am SUCH a daydreamer, especially when it comes to dry subjects like math and history. Eating living foods has definitely made a noticeable difference in my happiness level, ability to focus, energy consistency, analytical ablilities and memory retention. Fuzzy head? Gone. Headaches and cramps? Eliminated. It is very liberating, on so many levels, to eat living foods. 
    6. Eat whatever you want, whenever  you want! Have you ever looked at the fat content in a bag of carrots? It's nonexistent (just to  let you know.) Have you ever heard of anyone gaining weight for eating too many veggies? Of course not! There's a reason for that--carrots, for example, have 40 calories per serving, which is the caloric equivalent of 3 M&M's and one sniff of a pepperoni pizza. 
    7. Virtually no cleanup. Guess how long it takes me to make a salad? Maybe 10 - 15 minutes, if I go all out and make guacamole and chop 4 different types of veggies. Guess how long it takes to make pasta, Top Roman, a pizza, pancakes etc.? Roughly 10-40 minutes, depending on the recipe, plus the time it takes to scrape the burned flakes out of the pot, fan out the smoke, spritz air freshener, and wash all the pots and pan. (Someone often manages to burn their dinner at my apartment!) 
    8. No/less packaging. It uses less plastic shopping bags, takes less time and hassle to clean up, minimizes the amount garbage bags we fill, and thereby uses less plastic and other non-renewable/decomposable materials and occupies less space in the landfills. This is great for us, and the earth. Instead of leeching off the earth we create a more symbiotic, win/win relationship with nature.
    9. More regularity. Did you know you should be eliminating (squeezing a figurative lemon) at LEAST 3 times a day? Yup. It's true. Did you also know that the root of all disease is the buildup of toxins in the body? 'Tis also true! The 3 main ways we humans eliminate these toxins is through poo/pee, sweat, and breathing. So where do all these toxins go if we are not eliminating after every meal?? Around our waists, thighs, behinds . . . just to name a few. You will notice an immediate difference in your bowel movements even after one day of eating raw. As I said earlier--it is very liberating (on SO many levels!) to eat raw foods. 
    10. Connection with the earth. Eating pure foods that have been recently picked, that contain pure energy (enzymes/chlorophyll) and contain the most natural forms of preservatives possible feels different. When we eat processed (packaged/frozen/cooked foods) we disconnect ourselves from the earth that sustains us. Whereas, eating raw literally lifts your vibration level and perception of yourself and others. Instead of viewing this so-called "nature" as an abstract concept, you will come to realize and vibrationally feel and view yourself as an aspect of nature--a thread, weaving and growing and breathing with billions of others in its grand tapestry.  I have definitely begun to notice the beauty, intelligence, and value in all things--alive or not--and I know this is in part because in part because I have been letting go of old habits, addictions, cycles and thought processes that comes with living a more natural, pure life. I am so excited to be moving upwards and to  continuously adapt and grow in this raw foods lifestyle! Thank you for sharing your journey with mine :) <3

    Make it a personal goal to take a water bottle with you wherever you go! If you dont have a durable, non-disposable water bottle (glass, stainless steel, plastic etc), make one your next purchase! You will notice your mental clarity will sharpen, your energy will increase, your mood will be lighter, and you will influence others to do the same by example.



    HYDRATION FACTS

    • Drink 8-10 glasses per day (glass= 8 ounces)
    • Try adding lemon juice, a few drops of essential oil, or even lime,  orange or grapefruit juice to your water bottle. The citrus will add flavor, essential electrolytes (sodium potassium, chloride and phosphate), and will help cleanse and alkalize your system.
    • Lemon juice, though acidic on the PH scale amazingly has alkalizing effects when integrated into our bodies. 
    • An alkaline system is important because all foods that are acid forming (the ones we crave!--coffee, baked goods, candies, cookies, pastas, meats etc) are what make our bodies age; thus giving us wrinkles, spotty skins, illness and fatigue. The fastest way to check yourself or others for acidity is to search for bad odors. This can include smelly poo, discharge, sweat, breath etc--anything that smells about the body. If the system is alkaline, there is no stench. In fact, the more alkaline foods you eat the more you will notice that you do not have a need to put on 5 layers of deodorant, brush your teeth 2+ times per day, spray Glade in your bathroom after eliminating ect. 
    Water for Health
    1. Water comprises more than 80% of your blood, and the brain and muscles are three-fourths water
    2. 75% of Americans are chronically dehydrated
    3. If you feel thirsty your body is already dehydrated
    4. Even mild dehydration will slow down one’s metabolism as much as 3%
    5. Losing just 1-2% of your body weight in water causes a decrease in your performance of between 10-20%
    6. A mere 2% drop in body water can trigger fuzzy short term memory, trouble with basic math, and difficulty focusing on the computer screen or a printed page
